Historically, rapeseed oil was used only for technical purposes: for lighting, in the textile and leather industries, soap making, drying oil production and as a lubricant. But since the second half of the twentieth century, after low-grade and low-grade rapeseed varieties were developed, rapeseed oil has been widely used in the food industry. In these rapeseed varieties, the content of erucic acid is minimized (according to GOST, for edible oil — no more than 2%, for technical oil — up to 5%). Sometimes edible rapeseed oil from such varieties is called "canola" (Canadian Oil Low Acid).
The benefits of rapeseed oil are primarily associated with a good balance of fatty acids. It has one of the most balanced compositions among vegetable oils and contains about 7% saturated fats, about 63% monounsaturated fatty acids (mainly oleic acid, as in olive oil) and about 28% polyunsaturated fatty acids, including the essential omega-3 alpha-linolenic acid.
